
I eat curry approximately 2-3 times a week. Last night I fixed one with a number of different veggies, including carrots, green beans, onions, garlic, grated ginger, potatoes, squash, tomatoes, coconut milk and mango; of course seasoned with turmeric powder, cayenne pepper and curry powder, it was delicious. I could have fixed rice but as it has so many veggies and the starch from the potatoes it really didn’t need it, I just ate two bowls and that was plenty.
I eat all fresh ingredients and cooked from scratch, and extremely inexpensive. Here are a few pics:
